Monferrato Nebbiolo D.O.C.

Production.
Nebbiolo 100%. The vineyards face south-southwest with limestone marl soil; the production per hectare is 8 t. Manual harvest takes place in early October.

Winemaking process.
Carbonic maceration of whole grapes on the 30% of the must in steel tank with control of temperature, for the optimal extraction of the colour and aroma, without astringent tannins; traditional fermentation with control of temperature on the remaining part.

Refinement.
The aging is carried out in steel tank for a period of about 3 months, and after bottling it rests for at least 3 months.

Colour.
Characteristic ruby red, intense, brilliant.

Scent/Nose.
Ethereal, with notes of strawberry and berries.

Taste.
Fruity and delicate beginning, natural silky tannins, balanced, harmonious and fresh.

Matching.
Excellent as aperitif, but also with cheese, wild meat, white meat and poultry.
